Gnocchi Sriracha Mac and Cheese

This is a vegan / healthier take on the classic Mac and cheese. I used some homemade fresh gnocchi instead of traditional macaroni and the cheese is made from potato, onion , nutritional yeast and spices which make a perfect soupy cheese sauce which complements the pasta well. Oyster mushrooms and sriracha are added in to give a hot and meaty flavor to the dish. A perfect comfy dinner :)
Ingredients (1 Serving):
For the gnocchi
1 cup Spelt Flour
1 cup cauliflower florets
1 1/2 - 2 cup spring mix or spinach
Salt and Pepper to taste
Oil for cooking
For the cheese sauce:
1 large potato
1/2 small onion (you can omit this)
1/2 cup shopped or shredded carrot
A hint of paprika and tumeric
Salt to taste
Juice of 1/2 lemon
2 Tbsp Nutritional Yeast
1 tbsp Sriracha
Oyster or Regular mushrooms (you can add other veggies too :))
Recipe
Boil a pot of water. Add the cauliflower florets. Boil them till soft then add in the spinach or spring mix and continue cooking till the spinach welts. Drain the water (you can store the water and use it as an alternative to veggie stock)
Grind or Blend the veggies in a blender to create a fine paste. Use a muslin or clean regular cloth and drain the water from the blended veggies. The remaining mixture looks like a thick dry paste.

Add spelt flour , salt and pepper to the paste and mix it well. The mixture should get a dough like mold able consistency. Start with half cup of spelt flour and add in the rest as required.

Break the dough and mold the pasta into desired shape. I decided to go with small 1 inch rectangles since it was easy.

Cook the pasta in a pan by adding a little oil and cooking on both sides till it gets a brownish dark green color. Now the pasta's ready!
Cut King Oyster mushrooms or regular ones to thin slices and cook them till they are lightly browned.
For the cheese sauce, boil potatoes., onion and carrots till the potato is softed and fully cooked. Drain almost all the water (leave a little bit water) and add it to a blender . Add the lemon juice, nutritional yeast, salt , turmeric , paprika and Sriracha sauce. Blend it till it gets sauce like consistency.
To assemble the pasta add the pasta to a baking dish. So green!! :D

Add in the oyster mushrooms!

Pour in the cheese sauce. Make sure the entire pasta is covered properly. Spread accordingly :)
Top with some parsley and some more mushrooms.

Drizzle some sriracha sauce on the top

Bake at 475 F for 35-40 mins and enjoy :)
