"Kheema" Masala with King Oyster Mushrooms

Kheema is a traditional Mughal dish common in India. It is usually made with minced meat cooked with spices, herbs and even ghee (clarified butter) in some cases. This recipe uses shredded oyster mushrooms along with vegan butter to get that meaty, greasy taste. This recipe is also very much spicy. Proceed with caution :p


Ingredients

  • 1 1/2 cup shredded king oyster mushrooms

  • 1 cup frozen or fresh peas

  • 1/2 large red onion

  • 3 cloves of garlic

  • 1 tbsp ginger

  • 2 small thai chillies (omit if not accustomed to too much heat )

  • 2 tsp salt

  • 1 tsp tumeric

  • 2 tsp paprika

  • 1 tsp cayenne pepper

  • 2 tsp garam masala

  • 1 tsp dried fenugreek leaves

  • 1/2 cup cilantro leaves chopped

  • 3 tbsp Vegan Yogurt

  • 1 tbsp vegan butter (i used earth balance but any one will do)

  • Oil for sauteing



Recipe

  • Chop the garlic cloves, onion, chillies, ginger and saute on a pan till the onion becomes soft.

  • Blend the ingredients along with vegan yogurt and cilantro to create a paste.

  • Shred the king oyster mushrooms by running a fork on the length from the start of the stem all the way to the bottom. Chop the mushroom heads into tiny pieces.

  • On the same pan, add more oil and start frying the mushrooms and peas.

  • Once the mushrooms start to brown add in the paste and add 1 cup of water.

  • Mix everything well and bring it to a boil. You can adjust the spices to your taste. This recipe is for 1 serving.

  • Serve hot with cooked rice or Naan.
