Southern Style Fried Cauliflower Sandwich

This is a vegan take on a southern style fried chicken using cauliflower. The sandwich is made of fried cauliflower and a simple slaw. This slaw is made from purple cabbage, red bell peppers and jalapenos.



Ingredients


For the dry seasoning

  • 1 cup AP flour

  • 1 tsp tumeric

  • 1 tsp cayenne

  • 1 tsp cumin

  • 1 tbsp cajun seasoning

  • 1 tsp salt (adjust according to taste)

  • 1 tsp pepper (adjust according to taste)

  • 2 tbsp Parsley chopped

  • 1 tsp thyme freshly chopped

  • 1 tsp oregano freshly chopped


For the wet seasoning


  • 1/2 cup chickpea / garbanzo flour

  • 1/2 cup water

  • 1 tsp tumeric

  • 1 tsp cayenne pepper

  • 1 tbsp cajun seasoning

  • 1 tbsp paprika

  • 1 tsp salt (adjust according to taste)

  • 1 tsp pepper (adjust according to taste)

  • 1/3 - 1/2 cup buffalo sauce (adjust according to taste)

For the cauliflower

  • 1 medium cauliflower

  • 2 cloves of garlic

  • Pinch of Salt & Pepper

  • Olive oil


For the slaw

  • 1 cup purple cabbage

  • 1 cup red bell pepper chopped

  • 1 jalapeno

  • Juice of 1 lemon

  • Salt and Pepper according to taste


Whole wheat Bread (4 loaves)

Recipe


Remove the leaves from the cauliflower and cut it slowly at the centre. Then cut about 1 inch slices from both the cauliflower pieces. This will give you about 2 perfect cauliflower "steaks".

Mix about 3 tbsp of oil with chopped garlic, salt and pepper. Coat the Cauliflower steaks with the oil mix using a brush or just your hands!


Add some oil to the pan and start searing the cauliflower. Coat the top side of the cauliflower with paprika (you can skip this). Cook on medium heat for 4-5 minutes flip the steaks and coat the other side with paprika as well. Cook till you get a slight burnt paprika on both the sides of the steaks. This gives it a smoky flavor. The cooked steaks look like these:

Let the steaks cool and meanwhile prepare the dry and the wet mixture.

For the wet mixture you can use a egg replacement or flax egg. I generally use chickpea flour (besan) mixed with water. It creates a thick sticky paste that you can use as a replacement for an egg wash.


Mix chickpea flour, turmeric, cayenne pepper, paprika, cajun seasoning, salt and pepper. Add in the water and mix well. It will create a orange yellowish paste. It may take more than usual stirring to make the chickpea flour blend in depending the flour you use.

Pour in the buffalo sauce (I used Frank's red hot) and mix it well. This leads to a very red bright mixture that looks absolutely gorgeous.

Let's prepare the dry mixture. Just mix all the dry ingredients together and add in the fresh chopped herbs (you can definitely use dry ones as well). Mix well.

Heat oil in a frying pan. You can choose to deep fry or shallow fry and then baste the steak with oil.


Coat the steaks first with the wet mix and then with the dry mix. Coat well and then fry the steaks till they are red brown.


They looks little ugly but taste awesome after frying!

Make the slaw. Roughly chop the purple cabbage, slice the peppers and chop the jalapeno into small pieces. Add in salt , pepper and lemon juice and mix it well.

Assemble the sandwich. Toast the bread slices. Coat the bread with chipotle or your favorite spicy sauce! Top whole wheat bread with slaw and add the steak. Close with another bread slice and enjoy!
